I am a huge fan of the fab Heidi Swanson. She's the queen bee of healthy and I feel more virtuous just looking at the pictures in her books. Heidi is all about crunch and nourishment and nurturing oneself. I like to nurture myself. I like to be crunchy. I want to be nourished. Heidi is the homegirl of all three.
I noticed that Hungry Australian was doing a giveaway of Heidi's new book 'Super Natural Everyday' (my publisher Hardie Grant tweeted me the link, in fact!) So I took their advice and popped over for a peek. That's where I found this recipe, which I cooked last night. My grocer did not have kale (as the recipe prescribes), so I just added some crunchy beans instead and that worked out great.

ReplyDeleteYour version of Heidi's recipe looks fantastic. I was also going to substitute beans for kale but discovered the ones I had at home were looking a bit tired...
I'm down for a dessert and two vegetables/salads for Christmas Day lunch so am going to make this again as one of the vegetable dishes.
PS Love your work. And I really enjoyed the Good Stuff Holiday Guide, too - your kimchee salad looks very interesting. I adore a blend of spicy, salty + sour flavours :D
I asked my Mutti to get me this book for Christmas, am rather looking forward to the nourishment! Her blog is ace too.

ReplyDeleteHow good is this!! I made the pomegranate -glazed tempeh and eggplant last week, only I subbed maple syrup for pomegranate molasses and it was stupidly delicious :-)
