I did want to post this yesterday, but Telstra accidentally disconnected our internet TWO TIMES in one day, so I missed my chance!
No matter, I am here today! Catching up with yesterday! Phew! Hello!
Did you know that we are doing the catering for Rin's wedding ourselves? Well we are! We want super delicious and not super expensive, and to me that means HOME MADE! After a teensy bit of research, we bought a pizza oven! We actually have a really terrible oven at our house, so the pizza oven will double as our new improved oven after The Wedding! That means more home baked bread and better cakes (things our current oven has trouble with.)
We took the oven out for a spin last night. We made lots of delicious pizzas! They had thin, crunchy crusts and melty tops. Y to the UM.

My fiancé makes the best pizza I've ever had, just in our regular rental home oven. I'm not sure of his secrets, but I'll have to do a blog post about it. Would love a pizza oven though!
ReplyDeleteHello Pip, we had a pizza afternoon on Sunday at a friends place, and he made some really delicious toppings, I thought you might like to know a couple that were super delicious, char grilled zucchini and eggplant strips with cherry tomatoes, fresh basil, a few olives, little bits of prosciutto, and dotted with some yummy goats cheese - really, really good! Another was plain old basil, cherry tomatoes and goats cheese, lovely and fresh and yum. He made a heap of other great combos and they were all great. I think the secret to good pizza is a crispy base and a good tomato sauce and not too much cheese (unless you love heaps of cheese of course!) and nice fresh ingredients. ReplyDeleteWe've decided that the best base is a thin base, we dust it with semolina too. And we add char-grilled capsicum to our tomato puree sauce :)
I like to mix it up by using a yummy basil and cashew pesto dip for my sauce, then a super simple topping, just a triple smacked ham and a yummy buffalo mozzarella!The best pizza dough recipe I have come across is 500 gms regular flour, 1 tsp good salt ( Murray river pink flakes, yum!), 2tblsp olive oil, 250 mls warm water, 25 gms fresh yeast and a bit of sugar, mix, knead, let rise, knead, smoosh and bake! Works in a pizza oven and a regular oven! I also love Sicilian white anchovies!
ReplyDeleteA great topping is to first marinate thinly sliced zucchini in lemon juice, olive oil and thyme. Then put it on top of the pizza with a tomato sauce, some pesto, feta- or mozzarella cheese. Mushrooms fried with loads of garlic, olive oil and a splash of balsamic vineagar is always yummy as well.
