Today's Good Thing was for my family. I made a nice lazy day lunch. See. Good Things don't have to be super amazing, they just have to be Good.
I made Ruth's Lamb Koftas and my Mexican Potatoes. We had them in wraps with spiced yoghurt and tomatoes and cucumber. And nice cold glasses of Pinot Grigio. I bought that too, which I think is a Good Thing on a HOT Public Holiday. Are you doing Good Things too?

Simple Mexican Potatoes
1 kg of unpeeled roughly chopped potatoes
1/2 cup extra virgin olive oil
1 tablespoon of sweet paprika
1 teaspoon of dried oregano
juice of one lemon
optional : 1 tsp of chipotle powder
Toss all these ingredients together and make sure the potatoes are well coated in the oil and herbs and spices (and lemon juice!) Tumble onto a heavy based tray and bake in a HOT oven for 35 minutes (until nice and golden and tender and crunchy!) Season with salt and pepper.
Serve with salsa or mayo or yoghurt if you would like that!

Those potatoes sound AMAZING! But, isn't it a leap year this year?? I might have that wrong. In any case, I love this project and am determined to remember nice things everyday! :)
